Red Potato Salad

What can you say about just a plain old great amazing potato salad recipe? It’s a great one. You can’t fail, you can’t beat it, and nobody can go wrong. Sign me up for any recipe like this one please!!!!!!
Ingredients -

12 Cups Red Potatoes (cubed)
1 Cups 1 Medium Green Bell Pepper (chopped)
1/2 Cup Red Onion (Minced)
1/2 Cup Extra Virgin Olive Oil
1/3 Cup Red Wine Vinegar
2 Tablespoons Dijon Mustard
2 Tablespoons
Mayonnaise
Sea Salt
Fresh Ground Black Pepper

 
Preparation:

1. Add 1 teaspoon to 1 large pot of boiling water.

2. Add the potatoes and cook covered in boiling water for approximately 10 minutes, or until tender.

3. Drain in a colander.

4. Cool well.

5. In a large bowl, combine potatoes, bell pepper and onion.

6. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, mayonnaise, sea salt to taste and fresh ground black pepper to taste.

7. Pour over potato mixture.

8. Tossing gently to coat.

9. Cover and refrigerate for at least 2 hours then serve.
