Potato And Tuna Salad

If you love Tuna as much as I do you will love this, and so will your children. It is packed full of flavor from the olives and the curry, add the tuna and the egg and you have a mighty little feast on your hands. It saves in the fridge for up to a week to a week and a half.
Ingredients -

1-1/2 to 2 Pounds Potatoes (peeled)
1/2 Cup Ranch Dressing
1 to 2 Teaspoons Curry Powder
2 Cans Tuna (packed in water, drained)
1 Cup Whole Green Onions (sliced)
1/2 Cups Olives (pitted and chopped)
4 to 6 Cups Mixed Salad Greens
6 Plum Tomatoes (quartered lengthwise
3 Hard Boiled Eggs (quartered lengthwise)
Whole Green Beans (cooked)

 
Preparation:

1. Bring water to a boil in a large pan over high heat.

2. Meanwhile, cut the peeled potatoes into 1/2-inch cubes.

3. Add cubed potatoes to boiling water.

4. Return to boiling and simmer 5 minutes or until tender, but firm.

5. Drain potatoes in a colander.

6. Set aside.

7. In a large bowl, mix together the ranch salad dressing and curry powder to taste.

8. Stir in tuna, green onions and olives.

9. Gently stir in the warm potatoes.

10. To serve, arrange greens on a platter or on individual dishes.

11. Top with the potato mixture, then garnish with tomato wedges and egg quarters.

12. Surround the edge of the plates with cooked green beans, using only fresh, untrimmed ones, as young and slender as you can find.
