Irish Potato Salad with Apples

The addition of the apples brings a lovely flavor to the potatoes green onion and celery. It seems like an odd combination but the Irish have been doing it right for years and years. We could learn a few things from them. Enjoy this wonderful dish.
Ingredients -

2 Pounds Red Potatoes (halved)
1 White Onion (diced)
5 Stalks Celery (diced)
1 Bunch Green Onions (diced)
1 Cup Mayonnaise
I Cup Green Apples (diced)
1 Bunch Italian Parsley (leaves chopped)
Salt and Freshly Cracked Pepper
1/2 Cup Cider Vinegar
1 Teaspoon Celery Seed
1/2 Teaspoon Cayenne Pepper
1 Lemon

 
Preparation:

1. Add 2 teaspoons salt to a large pot of boiling water.

2. Add the potatoes and cook until you poke them and they are fork tender.

3. Remove from the water and cool.

4. When they are cool, add the diced onion, diced celery, 1 cup mayonnaise, 1 cup green apples, 1 bunch Italian Parsley, ½ cup cider vinegar, 1 teaspoon celery seed ½ teaspoon cayenne pepper and the juice of 1 lemon.

5. Mix together thoroughly.

6. Refrigerate for at least 2 hours then serve.

Apple Suggestion
You can use a Granny Smith apple as well if you want the entire dish to have more of a spicy and acidic bite. I prefer to use Golden Delicious apples because it balances out all the spicy and tartness and gives you a wonderful bite of sweetness in ever mouthful. Your choice, it’s always all up to you! It’s cooking fun!

I love mint. I love mint in almost everything I make. I also love Paprika. Sometimes I like to add just a little diced up mint to the top of each serving when I am through making the dish. It gives it an extra little kick, as well as a little sprinkle of paprika. It adds a nice little bit of extra flavor that compliments the sweet apple as well as it just makes the dish a bit prettier. You decide.
