Herb Potato Salad

What is better than wine, lemon juice, tarragon, parsley, pepper, Dijon mustard and cloves…..what an amazing flavor combination?
Ingredients -
3 Pounds Small White Potatoes
Kosher Salt
2 Tablespoons Dry White Wine
2 Tablespoons Chicken Stock
2 Tablespoons Lemon Juice
2 Garlic Cloves (minced)
1/2 Teaspoon Dijon Mustard
Freshly Ground Black Pepper
2/3 Cup Extra Virgin Olive Oil
1/4 Cup Red Onion (finely diced)
2 Tablespoons Fresh Tarragon (chopped)
2 Tablespoons Fresh Italian Parsley (chopped)
 
Preparation:

1. Place the potatoes and 2 tablespoons salt in a large pot of water.

2. Bring the water to a boil.

3. Lower the heat and simmer for 10 to 15 minutes, until the potatoes are barely tender when pierced with a knife.

4. Drain the potatoes in a colander.

5. Place the colander with the potatoes over the empty pot off the heat and cover with a clean, dry kitchen towel.

6. Leave the potatoes to steam for 15 to 20 minutes, until tender but firm.

7. Meanwhile, in a small bowl, whisk together the wine, chicken stock, lemon juice, garlic, mustard, 2 teaspoons salt and 3/4 teaspoon pepper.

8. Slowly whisk in the olive oil to make an emulsion.

9. Set aside.

10. When the potatoes are cool enough to handle, cut them into quarters or halves, depending on their size.

11. Place the cut potatoes in a large bowl and pour enough dressing over them to moisten.

12. As the salad sits, you may need to add more dressing.

13. Add the onion, tarragon and parsley, and salt and pepper to taste.

14. Toss well.

15. Cover and refrigerate for a few hours to allow the flavors to blend.

16. Serve cold or at room temperature.

When white wine is served it is usually served a t a chilled temperature. Usually they are served in a fluted glass with a very long stem. This is done so that the person holding the glass does not change the temperature of the wine in the glass.

Tarragon Use and Storage
It loses flavor unfortunately very fast if it is dried. If you choose to preserve it with herb in vinegar it’s a great option for those that want to use it for cooking when you can’t find it fresh. It can only be stored in the fridge for a short time or it fades quickly, which is so sad it say since it is such an amazing herb. When it is dried it retains less of its fragrance but it more available in your local supermarket.
