Potato And Smoked Salmon Salad
Ingredients -
2 Pounds Potatoes (peeled)
1/2 Cup Bottled Oil & Vinegar Salad Dressing
1 Tablespoon Fresh Ginger (minced)
1 Teaspoon Freshly Ground Black Pepper
1/4 Cup Fresh Dill (chopped)
3 Cup Tender-Crisp Cooked Peas, Asparagus and Broccoli (chopped)
4 Ounces Thinly Sliced Smoked Salmon (cut into strips)
1/2 Pounds Bibb lettuce (2 or 3 heads, trimmed)
Preparation:

1. Bring a large pot of water to boiling over high heat.

2. Meanwhile cut potatoes into 1/4-inch slices.

3. Add potato slices to boiling water.

4. Return to boiling and simmer 5 minutes or until tender, but firm.

5. Drain potatoes in a colanger.

6. Add the bottled dressing while they're hot.

7. Set aside.

8. In a large bowl, combine ginger, pepper, dill and the peas and chopped vegetables.

9. Gently stir in the potatoes and dressing with the smoked salmon.

10. Arrange on Bibb leaves to serve.
